Greetings from Denver!
The weather has been beautiful lately here. High of 50s-60s with the sun shining so bright that I look more Filipino each day.
Life is steady lately, which isn’t bad, so I’ll be working all weekend. But I’m really excited to see one of Glenn’s closest friend! He’s coming to visit for a few days this weekend…which means a Food Tour of Denver might be in the works.
Glenn, Allison and I stopped by Biker Jim’s the other night to do further “research” for when our friend visits.
They’ve changed their menu since I last went. Now it’s kind of a “subway” type concept, where you 1) choose your exotic hot dog (all cooked with it’s own unique spices): elk, wild boar, veal, duck, pheasant, etc. I went with the duck. Then 2) choose your premade topping of choice: I went with the sonoran-pinto beans, mustard, onions, jalapenos, mayo.
I don’t know how they do it but their hot dogs are pretty lean but so full of flavor while the toppings are the perfect mixture of spicy, savory, and even sweet. Biker Jim’s is one of my favorite places to go in Denver and I always take visitors here. They also always have Groupon Now deals so it’s a win/win situation. Did I mention Anthony Bourdain ate here?
I also hit up Costco the other day to stock up on my favorite things…
I just can’t quit these salmon burgers! I heat up one or two of these and call it dinner!
These chicken burgers are easy to reheat and are pretty tasty too.
I’ve said it before but I have a weakness for seaweed and squid salad…so I was a little TOO excited to see these at Costco again.
Typical “snack” plate. Disgusting cause nothing really goes together but it’s my favorite thing to eat right now. Hormonal much?
Let’s be honest. I love buying junk food in mass quantities. Like this box of kudos bars. Gone in 5 days? Maybe…
Like I said, dinner is always easy. And I’ve been on this spicy, BBQ kick lately.
I know, I know….high fructose corn syrup is the devil but it makes marinades so darn tasty!
Anyone else roast THREE pounds of broccoli? No wonder we go through TP at such a fast rate at my house…
Marinate chicken for half a day, plus steamed broccoli=dinner for 3 days.
I also made a Simple BBQ Pulled Pork with my handy dandy Crock Pot. So easy! You can google any recipe on the web! Cooking it so slowly made it darn juicy and tender.
1) I combined:
- 2.5lbs of boneless pork shoulder loin
- 1/2 cup ketchup
- 1/2 cup brown sugar
- 1/3 cup apple cider vinegar
- 1 packet of bbq pork seasoning blend
2) Threw it in a crock pot for 5 hours
3) Took out the meat to shred it with a fork and threw it back in the crock pot to mix with the sauce
4) Stuff yo darn face

Um, I could eat 3 lbs. of roasted broccoli in one sitting. I love that sh*t. And add a little spicy ketchup (siracha + ketchup)? I’m in.
Hot dogs are awesome. I don’t eat them nearly enough, but I love to top them with all kinds of different things.
I need to do a food tour of Denver.

Love the unique hot dog meats. Do they have ostrich? If so, try it!
I could eat tons of roasted broccoli now that I finally found a way to make it yummy. Still, I need to up the veggie intake!
What?! Seeweed salad at Costco?! I need to send Whit over there PRONTO!! And Kudos bars? Wow, that takes me back to elementary school…haha! I haven’t had one in years!
And I didn’t know they were dating in real life! They’re so cute together.

Yum I love Biker Jim’s! Haven’t seen the new menu though.
Glad you’re enjoying the mild Denver winter. Spring is always my least favorite season here. It’s rainy and snowy and just never consistently warms up until May.

yes on the broccoli…and I live alone. my apt smells. and there is absolutely nothing wrong with those eats…all looks delish and hella convenient. that’s how I roll. yummy hotdog, too. can’t beat a good sausage.

pulled pork is the jam. seriously, so good. also, i think biker jims is in my future tomorrow. that hot dog looks soooo goood.
I swear, I was craving pulled pork this past weekend. I was going to make Pioneer Woman’s Pop Pulled Pork, but then I got lazy and got City BBQ instead…it was a big disappointment. Lessons learned, stop being so lazy.
